Serves 10 people

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

Making the Citrus Syrup: Place all the ingredients into a saucepan, heat until it reaches a gentle boil, stirring so the sugar melts. After that, turn off the stove allowing it to cool fully. Decant into a sterilised bottle, close it and refrigerate it in the fridge, it can be stored for up to four weeks.

Preparing the Cocktail Base: Pour all the liquids into one sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through a fine cloth, making it perfectly clear.

When ready to serve: Measure 85ml of your batch mix to a stirring glass containing ice, and agitate lightly for a minute to cool it down. Filter into a frosted cocktail glass or similar, decorate with the cranberries and finish by giving it a light spray of mandarin oil over the top.
